Somewhere in a corporate lab, a team of scientists spent years perfecting the snack you could not stop eating last night. They measured the sugar, adjusted the salt, tuned the fat, and ran the crunch past panel after panel of tasters until the formula hit a target the industry has a name for: the bliss point. You were never supposed to stop.

What is the bliss point?

The bliss point is the exact combination of sugar, salt and fat that maximizes craving. The term comes from Howard Moskowitz, a psychophysicist who spent the 1970s working out precisely how much of each ingredient people could be driven to want. The food industry took his math and ran with it. The major products on the shelf have been optimized toward their bliss points through years of testing, tasting panels and formula adjustments, and there is no conspiracy needed here. It is ordinary product development, described openly in the industry's own language: cravability, moreishness, mouth feel.

The optimization goes past taste. Your brain naturally tires of one strong flavor, a built-in brake called sensory-specific satiety, so engineered foods are tuned to excite the palate without ever tripping that brake. Texture gets the same attention. Foods that melt quickly convince the brain that not much has been eaten, so the internal count never catches up to the calories. Every piece of it aims at the same target: keep you eating past the point your body would normally call enough.

Is this actually proven?

Proven, and by the strongest kind of study we have. In 2019, researchers at the National Institutes of Health admitted adults to a research unit for a month and controlled every bite. For two weeks the participants were offered ultra-processed food, and for two weeks unprocessed food, with the menus matched for calories, sugar, fat, fiber and macronutrients, and the order randomized. Told to eat as much or as little as they wanted, the same people ate about 500 more calories a day on the ultra-processed menu and gained about two pounds in two weeks, then lost the weight when the menu changed.

Nobody's willpower changed from one week to the next. The food changed, and intake followed.

If the food is engineered, why do I blame myself?

Because every diet you have ever been handed assumed a fair fight, and it was never a fair fight. Appetite is a signal, and yours has been the target of professional attention for decades. One person against entire research departments is not a contest of character.

I watch patients carry shame into my office that belongs on a spreadsheet in a food company's development lab. The engineering worked on them exactly as designed, and they conclude something is wrong with them. Getting that story right is not a small thing. The patients who stop treating their appetite as a moral failure are the ones who make progress, because they stop fighting themselves and start fighting the actual problem.

What can you actually do about it?

Eat foods that have no formula. Fresh fruits and vegetables, lean protein, very little added sugar. A food with one ingredient has no bliss point, because nobody engineered it. Protein and fiber earn their keep here too: they fill you, steady your blood sugar, and blunt the pull of everything else in the pantry. Guard your sleep, because short nights turn appetite up all by themselves.

And when biology needs a counterweight, medicine finally has one. GLP-1 medications turn the fullness signal back up, the same signal engineered food was built to slip past. Patients describe the quiet before they describe the weight loss: the constant background pull toward food, what many call food noise, simply fades.
